Ingredients
- Chicken breast - 200 grams, sliced
- Broccoli - 100 grams, cut into florets
- Bell pepper (red or yellow) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Soy sauce (or coconut aminos) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Red chili flakes - 1 teaspoon (optional)
- Fresh basil leaves - a handful, for garnish
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the broccoli, bell pepper, zucchini, and mushrooms to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Return the cooked chicken to the skillet with the vegetables.
- Pour in the soy sauce, fish sauce, and lime juice, stirring well to combine. Add red chili flakes if desired.
- Cook for an additional 2-3 minutes until everything is heated through and well combined.
- Serve hot, garnished with fresh basil leaves.
