Ingredients

  • Chicken breast - 200 grams, sliced
  • Broccoli - 100 grams, cut into florets
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Red chili flakes - 1 teaspoon (optional)
  • Fresh basil leaves - a handful, for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Add the broccoli, bell pepper, zucchini, and mushrooms to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Pour in the soy sauce, fish sauce, and lime juice, stirring well to combine. Add red chili flakes if desired.
  7. Cook for an additional 2-3 minutes until everything is heated through and well combined.
  8. Serve hot, garnished with fresh basil leaves.
