Ingredients

  • Zucchini - 2 medium, spiralized into noodles
  • Ground chicken - 250 grams
  • Garlic - 3 cloves, minced
  • Thai bird's eye chili - 2, finely chopped (adjust to taste)
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Oyster sauce (or keto-friendly alternative) - 1 tablespoon
  • Fresh Thai basil leaves - 1 cup, packed
  • Coconut oil - 1 tablespoon
  • Lime - 1, cut into wedges for serving
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add minced garlic and chopped bird's eye chili, sautéing until fragrant, about 1 minute.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  4. Stir in soy sauce, fish sauce, and oyster sauce, mixing well to combine all the flavors.
  5. Add the spiralized zucchini noodles to the skillet, tossing gently to coat them in the sauce. Cook for an additional 3-4 minutes until the zoodles are slightly softened but still firm.
  6. Remove from heat and fold in fresh Thai basil leaves until they are wilted.
  7. Serve immediately with lime wedges on the side for squeezing over the dish. Season with salt and pepper to taste.
