Ingredients

  • Ground chicken - 250 grams
  • Konjac noodles - 200 grams
  • Garlic - 3 cloves, minced
  • Thai bird's eye chilies - 2, finely chopped
  • Shallot - 1, finely sliced
  • Bell pepper - 1/2, sliced
  • Soy sauce (low sodium) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Oyster sauce (optional, low sugar) - 1 tablespoon
  • Coconut oil - 2 tablespoons
  • Thai basil leaves - 1/2 cup, loosely packed
  • Lime - 1, cut into wedges

Steps

  1. Heat coconut oil in a large pan or wok over medium-high heat.
  2. Add minced garlic and chopped chilies, stir-frying for about 30 seconds until fragrant.
  3. Add the sliced shallots and bell pepper, cooking for another 2-3 minutes until softened.
  4. Increase the heat to high and add the ground chicken, cooking until browned and cooked through, about 5-7 minutes.
  5. Stir in the soy sauce, fish sauce, and oyster sauce, mixing well to combine all ingredients.
  6. Add the konjac noodles to the pan, tossing everything together to ensure the noodles are well coated in the sauce, cooking for an additional 2-3 minutes.
  7. Remove from heat and fold in the Thai basil leaves until wilted.
  8. Serve hot with lime wedges on the side for squeezing over the dish.
