- Thai bird's eye chilies - 2, finely chopped
- Shallot - 1, finely sliced
- Bell pepper - 1/2, sliced
- Soy sauce (low sodium) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Oyster sauce (optional, low sugar) - 1 tablespoon
- Coconut oil - 2 tablespoons
- Thai basil leaves - 1/2 cup, loosely packed
- Lime - 1, cut into wedges
Steps
- Heat coconut oil in a large pan or wok over medium-high heat.
- Add minced garlic and chopped chilies, stir-frying for about 30 seconds until fragrant.
- Add the sliced shallots and bell pepper, cooking for another 2-3 minutes until softened.
- Increase the heat to high and add the ground chicken, cooking until browned and cooked through, about 5-7 minutes.
- Stir in the soy sauce, fish sauce, and oyster sauce, mixing well to combine all ingredients.
- Add the konjac noodles to the pan, tossing everything together to ensure the noodles are well coated in the sauce, cooking for an additional 2-3 minutes.
- Remove from heat and fold in the Thai basil leaves until wilted.
- Serve hot with lime wedges on the side for squeezing over the dish.
