- Pork minced - 200 grams
- Tomatoes (roasted) - 150 grams
- Shallots - 2 medium (about 50 grams)
- Garlic - 3 cloves
- Thai bird's eye chilies - 2 (adjust for spice preference)
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons (chopped)
- Coconut oil - 1 tablespoon
- Cucumber - 100 grams (for dipping)
- Radishes - 100 grams (for dipping)
Steps
- Preheat your oven to 200°C (390°F). Place the tomatoes on a baking sheet and roast for about 15-20 minutes until soft and slightly charred. Remove from the oven and let cool.
- In a pan, heat coconut oil over medium heat. Add minced shallots and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add minced pork to the pan, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- In a blender or food processor, combine roasted tomatoes, cooked pork mixture, bird's eye chilies, fish sauce, and lime juice. Blend until smooth but still slightly chunky.
- Transfer the mixture to a serving bowl and garnish with chopped cilantro.
- Slice the cucumber and radishes into sticks for dipping. Serve the Nam Prik Ong with the fresh vegetables.
