Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese, shredded - 1 cup
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Massaman curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Cooked chicken breast, shredded - 100 grams
  • Red bell pepper, thinly sliced - 1/2
  • Red onion, thinly sliced - 1/4
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, salt, and pepper. Mix until a dough forms.
  3. Place the dough on a parchment-lined baking sheet and press it into a round pizza shape, about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. In a small saucepan, combine Massaman curry paste and coconut milk over medium heat. Stir until smooth and heated through.
  6. Remove the pizza crust from the oven and spread the Massaman sauce evenly over the top.
