Ingredients

  • Zucchini - 2 medium, spiralized
  • Coconut oil - 1 tablespoon
  • Shallots - 2, minced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Massaman curry paste - 2 tablespoons
  • Coconut milk - 400 ml
  • Chicken breast - 200 grams, sliced
  • Vegetable broth - 500 ml
  • Fish sauce - 1 tablespoon
  • Peanuts - 30 grams, crushed
  • Lime - 1, juiced
  • Fresh cilantro - for garnish
  • Salt - to taste

Steps

  1. Heat coconut oil in a pot over medium heat. Add minced shallots, garlic, and ginger; sauté until fragrant.
  2. Stir in the Massaman curry paste and cook for another minute, allowing the spices to bloom.
  3. Add sliced chicken breast to the pot and cook until browned, about 5 minutes.
  4. Pour in the coconut milk and vegetable broth, and bring to a gentle simmer.
  5. Add fish sauce and salt to taste; let the soup simmer for 10 minutes, allowing the flavors to meld.
  6. In the last 5 minutes of cooking, add the spiralized zucchini to the pot and cook until just tender.
  7. Remove from heat, stir in lime juice, and serve hot, garnished with crushed peanuts and fresh cilantro.
