- Coconut milk - 400 ml
- Chicken breast - 200 grams, sliced
- Vegetable broth - 500 ml
- Fish sauce - 1 tablespoon
- Peanuts - 30 grams, crushed
- Lime - 1, juiced
- Fresh cilantro - for garnish

Steps
- Heat coconut oil in a pot over medium heat. Add minced shallots, garlic, and ginger; sauté until fragrant.
- Stir in the Massaman curry paste and cook for another minute, allowing the spices to bloom.
- Add sliced chicken breast to the pot and cook until browned, about 5 minutes.
- Pour in the coconut milk and vegetable broth, and bring to a gentle simmer.
- Add fish sauce and salt to taste; let the soup simmer for 10 minutes, allowing the flavors to meld.
- In the last 5 minutes of cooking, add the spiralized zucchini to the pot and cook until just tender.
- Remove from heat, stir in lime juice, and serve hot, garnished with crushed peanuts and fresh cilantro.
