Ingredients
- Zucchini Noodles - 400 grams
- Chicken Breast - 250 grams, diced
- Coconut Milk - 200 ml
- Massaman Curry Paste - 2 tablespoons
- Peanut Butter (natural) - 1 tablespoon
- Fish Sauce - 1 tablespoon
- Lime Juice - 1 tablespoon
- Cilantro - for garnish
- Salt - to taste
- Peanuts - 30 grams, chopped (for garnish)
- Red Bell Pepper - 1 medium, sliced
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
Steps
- Heat a large skillet over medium heat and add a little oil. Once hot, add the diced chicken breast and cook until browned, about 5-7 minutes.
- Add the sliced onion, red bell pepper, minced garlic, and grated ginger to the skillet. Sauté for another 3-4 minutes until the vegetables start to soften.
- Stir in the Massaman curry paste and peanut butter, mixing well to coat the chicken and vegetables. Cook for an additional 2 minutes until fragrant.
- Pour in the coconut milk and fish sauce, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld.
- While the sauce is simmering, prepare the zucchini noodles. You can either sauté them in a separate pan for 2-3 minutes or add them directly into the sauce to cook for 2-3 minutes until just tender.
- Add lime juice to the skillet and stir well. Adjust seasoning with salt if needed.
- Serve the Massaman noodle bowl hot, garnished with chopped peanuts and fresh cilantro.
