Ingredients

  • Zucchini Noodles - 400 grams
  • Chicken Breast - 250 grams, diced
  • Coconut Milk - 200 ml
  • Massaman Curry Paste - 2 tablespoons
  • Peanut Butter (natural) - 1 tablespoon
  • Fish Sauce - 1 tablespoon
  • Lime Juice - 1 tablespoon
  • Cilantro - for garnish
  • Salt - to taste
  • Peanuts - 30 grams, chopped (for garnish)
  • Red Bell Pepper - 1 medium, sliced
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. Heat a large skillet over medium heat and add a little oil. Once hot, add the diced chicken breast and cook until browned, about 5-7 minutes.
  2. Add the sliced onion, red bell pepper, minced garlic, and grated ginger to the skillet. Sauté for another 3-4 minutes until the vegetables start to soften.
  3. Stir in the Massaman curry paste and peanut butter, mixing well to coat the chicken and vegetables. Cook for an additional 2 minutes until fragrant.
  4. Pour in the coconut milk and fish sauce, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld.
  5. While the sauce is simmering, prepare the zucchini noodles. You can either sauté them in a separate pan for 2-3 minutes or add them directly into the sauce to cook for 2-3 minutes until just tender.
  6. Add lime juice to the skillet and stir well. Adjust seasoning with salt if needed.
  7. Serve the Massaman noodle bowl hot, garnished with chopped peanuts and fresh cilantro.
