Ingredients

  • Beef chuck - 300 grams, cut into bite-sized pieces
  • Coconut oil - 2 tablespoons
  • Massaman curry paste - 2 tablespoons
  • Coconut milk - 400 ml
  • Beef broth - 100 ml
  • Cauliflower florets - 200 grams
  • Red onion - 1 small, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Fish sauce - 1 tablespoon
  • Stevia or erythritol - 1 teaspoon (optional)
  • Salt - to taste
  • Lime - 1, juiced
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the coconut oil over medium heat. Add the sliced red onion, garlic, and ginger, and sauté until fragrant and the onion is translucent.
  2. Add the beef pieces to the pot and brown them on all sides, about 5-7 minutes.
  3. Stir in the Massaman curry paste and cook for another 2 minutes, allowing the spices to become fragrant.
  4. Pour in the coconut milk and beef broth, stirring to combine. Bring the mixture to a simmer.
  5. Add the cauliflower florets and fish sauce. Simmer uncovered for about 25 minutes, or until the beef is tender and the cauliflower is cooked through.
  6. If desired, add stevia or erythritol to balance the flavors. Season with salt and lime juice to taste.
  7. Serve hot, garnished with fresh cilantro.
