Ingredients
- Beef chuck - 300 grams, cut into bite-sized pieces
- Coconut oil - 2 tablespoons
- Massaman curry paste - 2 tablespoons
- Coconut milk - 400 ml
- Beef broth - 100 ml
- Cauliflower florets - 200 grams
- Red onion - 1 small, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Fish sauce - 1 tablespoon
- Stevia or erythritol - 1 teaspoon (optional)
- Salt - to taste
- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the coconut oil over medium heat. Add the sliced red onion, garlic, and ginger, and sauté until fragrant and the onion is translucent.
- Add the beef pieces to the pot and brown them on all sides, about 5-7 minutes.
- Stir in the Massaman curry paste and cook for another 2 minutes, allowing the spices to become fragrant.
- Pour in the coconut milk and beef broth, stirring to combine. Bring the mixture to a simmer.
- Add the cauliflower florets and fish sauce. Simmer uncovered for about 25 minutes, or until the beef is tender and the cauliflower is cooked through.
- If desired, add stevia or erythritol to balance the flavors. Season with salt and lime juice to taste.
- Serve hot, garnished with fresh cilantro.
