Ingredients

  • Cauliflower rice - 200 grams
  • Coconut cream - 100 ml
  • Erythritol or monk fruit sweetener - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Ripe mango - 1 medium, sliced
  • Sesame seeds (optional) - 1 tablespoon

Steps

  1. Steam the cauliflower rice for about 10 minutes until tender.
  2. In a saucepan, combine the steamed cauliflower rice, coconut cream, erythritol or monk fruit sweetener, and salt over low heat.
  3. Stir well until the mixture is heated through and slightly thickened, about 5 minutes.
  4. Remove from heat and let it cool slightly.
  5. To serve, divide the coconut cauliflower mixture into two bowls and top each with sliced mango.
  6. Sprinkle sesame seeds on top for added texture, if desired.
