Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Ground chicken or pork - 200 grams
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Wash and chop the cauliflower into florets, then steam until tender (about 5-7 minutes).
  3. Once cooked, place the cauliflower in a clean kitchen towel and squeeze out excess moisture. Blend it in a food processor until it resembles rice.
  4. In a bowl, mix the cauliflower rice with shredded mozzarella, grated parmesan, and the egg to form a dough.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust. Bake for 15-20 minutes until golden and firm.
  6. In a skillet, heat olive oil over medium heat. Add chopped red onion and minced garlic, sautéing until fragrant.
  7. Add the ground chicken or pork to the skillet, cooking until browned. Stir in the fish sauce, lime juice, chili flakes, salt, and pepper. Cook for an additional 3-4 minutes.
  8. Remove the skillet from heat and mix in chopped cilantro and mint.
  9. Spread the meat mixture evenly over the baked cauliflower crust. Bake for another 5-7 minutes to heat through.
