Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground chicken - 200g
  • Shallots - 2, finely sliced
  • Garlic - 2 cloves, minced
  • Fresh mint leaves - 20g, chopped
  • Fresh cilantro - 20g, chopped
  • Lime juice - 30ml
  • Fish sauce - 15ml
  • Chili flakes - 1 tsp (adjust to taste)
  • Peanuts - 30g, crushed (optional)
  • Olive oil - 1 tbsp
  • Salt - to taste

Steps

  1. Using a spiralizer or vegetable peeler, create zoodles from the zucchini and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced shallots, and sauté for 2-3 minutes until fragrant.
  3. Add ground chicken to the skillet and cook, stirring frequently, until browned and cooked through, about 5-7 minutes.
  4. Stir in fish sauce, lime juice, chili flakes, and salt. Cook for an additional 2 minutes to combine flavors.
  5. Remove from heat and stir in chopped mint and cilantro.
  6. In a large bowl, toss the zoodles with the chicken mixture until well combined. Adjust seasoning if necessary.
  7. Serve immediately, topped with crushed peanuts if desired.
