- Zucchini - 2 medium (about 400g)
- Ground chicken - 200g
- Shallots - 2, finely sliced
- Garlic - 2 cloves, minced
- Fresh mint leaves - 20g, chopped
- Fresh cilantro - 20g, chopped
- Lime juice - 30ml
- Fish sauce - 15ml
- Chili flakes - 1 tsp (adjust to taste)
- Peanuts - 30g, crushed (optional)
- Olive oil - 1 tbsp
- Salt - to taste
Steps
- Using a spiralizer or vegetable peeler, create zoodles from the zucchini and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced shallots, and sauté for 2-3 minutes until fragrant.
- Add ground chicken to the skillet and cook, stirring frequently, until browned and cooked through, about 5-7 minutes.
- Stir in fish sauce, lime juice, chili flakes, and salt. Cook for an additional 2 minutes to combine flavors.
- Remove from heat and stir in chopped mint and cilantro.
- In a large bowl, toss the zoodles with the chicken mixture until well combined. Adjust seasoning if necessary.
- Serve immediately, topped with crushed peanuts if desired.
