Ingredients

  • Ground chicken - 250 grams
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Red chili flakes - 1 teaspoon
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Shallot - 1 small, finely sliced
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, sliced
  • Lettuce leaves - 4 large, for serving
  • Cauliflower rice - 200 grams, cooked
  • Peanuts - 2 tablespoons, crushed (optional)

Steps

  1. In a large skillet over medium heat, add the ground chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add the minced garlic and sliced shallot to the skillet, cooking for an additional 2-3 minutes until fragrant.
  3. Stir in the fish sauce, lime juice, and red chili flakes, mixing well to combine all the flavors.
  4. Remove the skillet from heat and fold in the chopped mint, cilantro, and green onions.
  5. Serve the Larb Gai mixture on a bed of lettuce leaves with a side of cauliflower rice.
  6. Sprinkle crushed peanuts on top for added texture, if desired.
