Ingredients
- Chicken thighs - 300g, boneless and skinless, cut into bite-sized pieces
- Coconut oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Red curry paste - 2 tablespoons
- Coconut milk - 400ml
- Chicken broth - 250ml
- Fish sauce - 1 tablespoon
- Lime juice - 2 tablespoons
- Zucchini - 1 medium, spiralized into noodles
- Green onions - 2, chopped for garnish
- Cilantro - a handful, chopped for garnish
- Chili flakes - to taste
- Salt - to taste
Steps
- Heat coconut oil in a large pot over medium heat.
- Add minced garlic and grated ginger, and sauté for about 2 minutes until fragrant.
- Stir in the red curry paste and cook for another minute, mixing well.
- Add chicken pieces to the pot and sauté until lightly browned on all sides, about 5-7 minutes.
- Pour in the coconut milk and chicken broth, then bring to a gentle simmer.
- Add fish sauce, lime juice, and salt to taste, and let the soup simmer for 10-15 minutes until the chicken is fully cooked.
- In the last 5 minutes of cooking, add the spiralized zucchini noodles to the pot.
- Serve hot, garnished with chopped green onions, cilantro, and chili flakes if desired.
