Ingredients

  • Cauliflower - 300 grams, riced
  • Coconut milk - 200 ml
  • Erythritol sweetener - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Mango - 1 medium, sliced
  • Unsweetened shredded coconut - 2 tablespoons, toasted

Steps

  1. Prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice.
  2. In a medium saucepan, combine the riced cauliflower, coconut milk, erythritol sweetener, and salt. Mix well.
  3. Cook the mixture over medium heat, stirring occasionally, for about 10-15 minutes until the cauliflower is tender and the mixture is creamy.
  4. Remove from heat and let it cool for a few minutes to thicken.
  5. While the cauliflower rice cools, slice the mango into thin strips.
  6. To serve, divide the coconut cauliflower rice into two bowls, top with sliced mango, and sprinkle with toasted shredded coconut.
