- Cauliflower - 300 grams, riced
- Coconut milk - 200 ml
- Erythritol sweetener - 2 tablespoons
- Salt - 1/4 teaspoon
- Mango - 1 medium, sliced
- Unsweetened shredded coconut - 2 tablespoons, toasted
Steps
- Prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice.
- In a medium saucepan, combine the riced cauliflower, coconut milk, erythritol sweetener, and salt. Mix well.
- Cook the mixture over medium heat, stirring occasionally, for about 10-15 minutes until the cauliflower is tender and the mixture is creamy.
- Remove from heat and let it cool for a few minutes to thicken.
- While the cauliflower rice cools, slice the mango into thin strips.
