Ingredients

  • Pork neck (boneless) - 400 grams
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Red chili flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut oil - 1 tablespoon (for grilling)
  • Salt - to taste

Steps

  1. In a mixing bowl, combine soy sauce, fish sauce, lime juice, minced garlic, chopped cilantro, red chili flakes, black pepper, and salt to create the marinade.
  2. Cut the pork neck into thick slices (about 1.5 cm each) and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat and brush it with coconut oil.
  4. Remove the pork from the marinade and place it on the grill. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 70°C (160°F) and the pork is nicely charred.
  5. Once cooked, remove the pork from the grill and let it rest for 5 minutes before slicing.
  6. Serve warm, garnished with additional cilantro and lime wedges if desired.
