Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Coconut oil - 2 tablespoons
  • Green curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Cooked chicken breast (shredded) - 150 grams
  • Bell pepper (sliced) - 1/2 medium
  • Fresh basil leaves - 10 leaves
  • Lime juice - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Press the dough onto a baking sheet lined with parchment paper to form a pizza base, about 1/2 cm thick.
  4. Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
  5. In a small saucepan, heat coconut oil over medium heat. Add green curry paste and sauté for 1-2 minutes until fragrant.
  6. Pour in coconut milk and bring to a simmer. Stir in shredded chicken and bell pepper. Cook for another 3-5 minutes until the peppers are tender.
  7. Remove the pizza base from the oven and spread the green curry chicken mixture evenly over the top.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes.
  9. Remove from the oven, drizzle with lime juice, and garnish with fresh basil leaves before serving.
