Ingredients
- Zucchini - 2 medium, spiralized
- Coconut oil - 1 tablespoon
- Green curry paste - 2 tablespoons
- Coconut milk - 400 ml (1 can)
- Chicken breast - 200 grams, sliced thinly
- Bell pepper - 1 medium, sliced
- Spinach - 100 grams, fresh
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh basil - a handful, for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the coconut oil in a large skillet over medium heat.
- Add the sliced chicken breast and cook until no longer pink, about 5-7 minutes.
- Stir in the green curry paste and cook for another 1-2 minutes until fragrant.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the sliced bell pepper and cook for 3-4 minutes until tender.
- Stir in the fresh spinach, fish sauce, and lime juice, cooking until the spinach wilts.
- Season with salt and black pepper to taste.
- In a separate bowl, lightly sauté the spiralized zucchini noodles for 2-3 minutes until just tender.
- Serve the green curry sauce over the zucchini noodles and garnish with fresh basil.
