Ingredients

  • Coconut milk - 400 ml
  • Chicken breast - 200 grams, diced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Spinach - 100 grams
  • Thai basil - 10 leaves
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add green curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir to combine with the curry paste.
  4. Add the diced chicken breast to the pan and cook for about 5-7 minutes until the chicken is cooked through.
  5. Stir in the sliced zucchini and bell pepper, cooking for another 5 minutes until vegetables are tender.
  6. Add spinach and cook until wilted, about 2 minutes.
  7. Stir in fish sauce, lime juice, and season with salt and pepper to taste.
