- 400g mixed low-carb vegetables (zucchini, bell peppers, and green beans)
- 300g shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 2 cups water
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon tamarind paste
- 1 tablespoon red curry paste
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon erythritol (optional, for sweetness)
- Fresh cilantro for garnish
Steps
- Heat coconut oil in a large pot over medium heat.
- Add red curry paste and sauté for 1-2 minutes until fragrant.
- Pour in the water and bring to a simmer.
- Stir in fish sauce, lime juice, tamarind paste, chili powder, and erythritol. Simmer for 5 minutes.
- Add the mixed low-carb vegetables and shrimp to the pot. Cook until the shrimp are pink and vegetables are tender, about 5-7 minutes.
