Ingredients

  • 400g mixed low-carb vegetables (zucchini, bell peppers, and green beans)
  • 300g shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 2 cups water
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon tamarind paste
  • 1 tablespoon red curry paste
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon erythritol (optional, for sweetness)
  • Fresh cilantro for garnish

Steps

  1. Heat coconut oil in a large pot over medium heat.
  2. Add red curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the water and bring to a simmer.
  4. Stir in fish sauce, lime juice, tamarind paste, chili powder, and erythritol. Simmer for 5 minutes.
  5. Add the mixed low-carb vegetables and shrimp to the pot. Cook until the shrimp are pink and vegetables are tender, about 5-7 minutes.
  6. Adjust seasoning to taste and remove from heat.
  7. Serve hot, garnished with fresh cilantro.
