Ingredients

  • Coconut oil - 2 tablespoons
  • Thai green curry paste - 2 tablespoons
  • Coconut milk - 400 ml
  • Chicken breast - 200 grams, sliced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Spinach - 100 grams
  • Fish sauce - 1 tablespoon
  • Fresh basil leaves - 10 grams
  • Lime juice - 1 tablespoon
  • Salt - to taste

Steps

  1. In a large pan, heat the coconut oil over medium heat.
  2. Add the Thai green curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir to combine with the curry paste.
  4. Add the sliced chicken breast to the pan and cook for 5-7 minutes until it is no longer pink.
