Ingredients

  • Coconut oil - 2 tablespoons
  • Red curry paste - 2 tablespoons
  • Coconut milk - 400 ml
  • Chicken breast, diced - 200 grams
  • Bell pepper, sliced - 1 medium
  • Zucchini, sliced - 1 small
  • Mushrooms, sliced - 100 grams
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - 10 grams
  • Cilantro, chopped - 10 grams
  • Chili, sliced (optional) - 1

Steps

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the red curry paste and sauté for about 1 minute until fragrant.
  3. Pour in the coconut milk while stirring to combine with the curry paste.
  4. Bring the mixture to a simmer and add the diced chicken breast.
  5. Cook for about 10 minutes until the chicken is cooked through.
  6. Add the sliced bell pepper, zucchini, and mushrooms to the pan.
  7. Stir in the fish sauce and lime juice, then simmer for another 5 minutes until the vegetables are tender.
  8. Remove from heat and stir in the fresh basil leaves and chopped cilantro.
  9. Serve hot, garnished with additional cilantro and sliced chili if desired.
