Ingredients
- Pork belly - 500 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Thai chili flakes - 1/2 teaspoon
- Lime - 1, juiced
- Coconut oil - 2 tablespoons
Steps
- Preheat the oven to 160°C (320°F).
- Score the skin of the pork belly in a criss-cross pattern, being careful not to cut into the meat.
- In a small bowl, mix salt, black pepper, garlic powder, coriander powder, cumin powder, and Thai chili flakes.
- Rub the spice mixture all over the pork belly, ensuring it gets into the scored skin.
- Place the pork belly on a rack in a roasting tray and roast in the preheated oven for 60 minutes.
- After 60 minutes, increase the oven temperature to 220°C (428°F) and roast for an additional 20-30 minutes until the skin is crispy and golden brown.
- Remove from the oven and let it rest for 10 minutes before slicing.
- Drizzle lime juice over the sliced pork belly before serving.
