Ingredients

  • Pork belly - 500 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Thai chili flakes - 1/2 teaspoon
  • Lime - 1, juiced
  • Coconut oil - 2 tablespoons

Steps

  1. Preheat the oven to 160°C (320°F).
  2. Score the skin of the pork belly in a criss-cross pattern, being careful not to cut into the meat.
  3. In a small bowl, mix salt, black pepper, garlic powder, coriander powder, cumin powder, and Thai chili flakes.
  4. Rub the spice mixture all over the pork belly, ensuring it gets into the scored skin.
  5. Place the pork belly on a rack in a roasting tray and roast in the preheated oven for 60 minutes.
  6. After 60 minutes, increase the oven temperature to 220°C (428°F) and roast for an additional 20-30 minutes until the skin is crispy and golden brown.
  7. Remove from the oven and let it rest for 10 minutes before slicing.
  8. Drizzle lime juice over the sliced pork belly before serving.
