Ingredients

  • Tapioca pearls - 30 grams
  • Coconut milk - 200 ml
  • Water - 200 ml
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Unsweetened shredded coconut - 2 tablespoons (for garnish)

Steps

  1. In a medium saucepan, combine water and tapioca pearls. Bring to a boil over medium heat, stirring occasionally.
  2. Once boiling, reduce heat to low and let it simmer for about 15 minutes, or until the tapioca pearls are translucent and tender.
  3. In another saucepan, mix coconut milk, erythritol, vanilla extract, and a pinch of salt. Heat gently until just warm, stirring to dissolve the erythritol.
  4. Once the tapioca pearls are cooked, drain any excess water and then stir them into the warm coconut milk mixture. Let it simmer for an additional 5 minutes.
  5. Remove from heat and allow the mixture to cool slightly before serving.
