  • Coconut milk - 400 ml
  • Erythritol - 2 tablespoons
  • Agar-agar powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Pandan leaves (optional) - 1-2 leaves
  • Unsweetened shredded coconut - 2 tablespoons (for garnish)

Steps

  1. In a medium saucepan, combine the coconut milk, erythritol, agar-agar powder, vanilla extract, and salt. If using pandan leaves, tie them into a knot and add to the mixture.
  2. Heat the mixture over medium heat, stirring continuously until it reaches a gentle boil. Allow it to boil for 2-3 minutes to activate the agar-agar.
  3. Remove the pandan leaves (if used) and pour the mixture into two serving bowls or ramekins.
  4. Let the pudding cool at room temperature for about 10 minutes, then transfer to the refrigerator to set for at least 1 hour.
