- Pandan leaves (optional) - 1-2 leaves
- Unsweetened shredded coconut - 2 tablespoons (for garnish)
Steps
- In a medium saucepan, combine the coconut milk, erythritol, agar-agar powder, vanilla extract, and salt. If using pandan leaves, tie them into a knot and add to the mixture.
- Heat the mixture over medium heat, stirring continuously until it reaches a gentle boil. Allow it to boil for 2-3 minutes to activate the agar-agar.
- Remove the pandan leaves (if used) and pour the mixture into two serving bowls or ramekins.
