Ingredients

  • Coconut milk - 200 ml
  • Water - 100 ml
  • Gelatin powder - 10 g
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Unsweetened shredded coconut - 2 tablespoons (for garnish)

Steps

  1. In a small saucepan, combine the coconut milk, water, and a pinch of salt. Heat the mixture over low heat until warm, but do not boil.
  2. In a separate bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
  3. Once bloomed, add the gelatin mixture to the warm coconut mixture, stirring constantly until the gelatin fully dissolves.
  4. Add the erythritol and vanilla extract, mixing well to incorporate all ingredients.
  5. Pour the mixture into two small dessert cups or molds, and refrigerate for at least 2 hours or until set.
  6. Once set, garnish with unsweetened shredded coconut before serving.
