- Unsweetened shredded coconut - 2 tablespoons (for garnish)
Steps
- In a small saucepan, combine the coconut milk, water, and a pinch of salt. Heat the mixture over low heat until warm, but do not boil.
- In a separate bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- Once bloomed, add the gelatin mixture to the warm coconut mixture, stirring constantly until the gelatin fully dissolves.
