Ingredients

  • Almond flour - 120 grams
  • Mozzarella cheese (shredded) - 200 grams
  • Cream cheese - 60 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Coconut oil - 2 tablespoons
  • Coconut milk - 200 ml
  • Red curry paste - 2 tablespoons
  • Bell pepper (sliced) - 100 grams
  • Red onion (sliced) - 50 grams
  • Zucchini (sliced) - 100 grams
  • Fresh basil leaves - a handful
  • Lime (for juice and garnish) - 1

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, and baking powder to create the pizza dough. Mix until well combined.
  3. Transfer the dough onto a parchment-lined baking sheet and shape it into a round pizza crust, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. While the crust is baking, prepare the coconut curry sauce by heating coconut oil in a saucepan over medium heat. Add red curry paste and stir for 1-2 minutes until fragrant.
  6. Pour in the coconut milk, stirring to combine. Simmer for 5 minutes until slightly thickened, then remove from heat.
  7. Once the crust is done, remove it from the oven and spread the coconut curry sauce evenly over the crust.
  8. Top the pizza with sliced bell pepper, red onion, and zucchini.
