Ingredients
- Cauliflower - 300 grams
- Shredded mozzarella cheese - 100 grams
- Egg - 1 large
- Salt - 1 teaspoon
- Coconut oil - 1 tablespoon
- Cooked chicken breast - 150 grams, shredded
- Coconut milk - 100 ml
- Thai red curry paste - 1 tablespoon
- Bell pepper - 1 medium, sliced
- Red onion - 1 small, thinly sliced
- Fresh cilantro - a handful, chopped
- Lime - 1, juiced
- Chili flakes - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a food processor, pulse the cauliflower until it resembles rice. Steam the cauliflower rice for about 5 minutes and then let it cool.
- Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
- In a bowl, combine the cauliflower rice, mozzarella cheese, egg, and salt. Mix well until a dough forms.
- Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown and firm.
- In a skillet, heat coconut oil over medium heat. Add shredded chicken, coconut milk, and Thai red curry paste; stir well and cook for 5-7 minutes until heated through.
- Remove the crust from the oven and top with the chicken mixture, sliced bell pepper, and red onion.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Once done, garnish with fresh cilantro, lime juice, and chili flakes to taste before serving.
