Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 100 grams
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Coconut oil - 1 tablespoon
  • Cooked chicken breast - 150 grams, shredded
  • Coconut milk - 100 ml
  • Thai red curry paste - 1 tablespoon
  • Bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - a handful, chopped
  • Lime - 1, juiced
  • Chili flakes - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, pulse the cauliflower until it resembles rice. Steam the cauliflower rice for about 5 minutes and then let it cool.
  3. Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
  4. In a bowl, combine the cauliflower rice, mozzarella cheese, egg, and salt. Mix well until a dough forms.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden brown and firm.
  7. In a skillet, heat coconut oil over medium heat. Add shredded chicken, coconut milk, and Thai red curry paste; stir well and cook for 5-7 minutes until heated through.
  8. Remove the crust from the oven and top with the chicken mixture, sliced bell pepper, and red onion.
  9. Return the pizza to the oven and bake for an additional 10 minutes.
  10. Once done, garnish with fresh cilantro, lime juice, and chili flakes to taste before serving.
