Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Coconut milk - 400 ml
  • Egg noodles - 200 grams
  • Yellow curry paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Red onion - 1, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Cilantro - ¼ cup, chopped
  • Green onions - 2, sliced
  • Fried shallots - ¼ cup (for garnish)
  • Oil - 1 tablespoon (for frying)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the oil over medium heat and sauté the sliced red onion, garlic, and ginger until fragrant, about 3-4 minutes.
  2. Add the yellow curry paste to the pot and cook for another 2 minutes, stirring frequently to combine the flavors.
  3. Add the chicken thighs to the pot, stirring to coat them in the curry mixture, and cook for 5-6 minutes until they start to brown.
  4. Pour in the coconut milk and vegetable broth, then add the soy sauce and brown sugar. Stir well and bring to a simmer.
  5. Cover the pot and let the soup simmer for 20 minutes, or until the chicken is cooked through and tender.
  6. While the soup is simmering, cook the egg noodles according to package instructions. Drain and set aside.
  7. Once the chicken is done, remove it from the pot and shred it into bite-sized pieces, then return it to the soup.
  8. Stir in the lime juice, and season with salt and black pepper to taste.
  9. To serve, place a portion of egg noodles in bowls, ladle the soup over the noodles, and top with shredded chicken, crispy fried shallots, cilantro, and green onions.
