Ingredients

  • Rice flour - 100 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Green onions - 2 tablespoons, chopped
  • Corn kernels - 50 grams (optional)
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. In a mixing bowl, combine the rice flour, sugar, and salt.
  2. Gradually add the coconut milk and water to the dry ingredients, whisking until smooth and well combined.
  3. Preheat a Kanom Krok pan or a non-stick muffin tin over medium heat and lightly grease with oil.
  4. Pour a small amount of the batter into each mold, filling them about halfway.
  5. If using, add a few pieces of corn kernels or a sprinkle of chopped green onions on top of the batter in each mold.
  6. Cover the pan with a lid and cook for about 10-15 minutes, or until the edges start to brown and the tops are set.
  7. Once cooked, remove the Kanom Krok from the molds and let cool slightly before serving.
  8. Serve warm, garnished with sesame seeds or additional green onions if desired.
