- Rice flour - 100 grams
- Coconut milk - 200 ml
- Water - 100 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Green onions - 2 tablespoons, chopped
- Corn kernels - 50 grams (optional)
- Sesame seeds - 1 tablespoon (optional)
Steps
- In a mixing bowl, combine the rice flour, sugar, and salt.
- Gradually add the coconut milk and water to the dry ingredients, whisking until smooth and well combined.
- Preheat a Kanom Krok pan or a non-stick muffin tin over medium heat and lightly grease with oil.
- Pour a small amount of the batter into each mold, filling them about halfway.
- If using, add a few pieces of corn kernels or a sprinkle of chopped green onions on top of the batter in each mold.
- Cover the pan with a lid and cook for about 10-15 minutes, or until the edges start to brown and the tops are set.
- Once cooked, remove the Kanom Krok from the molds and let cool slightly before serving.
- Serve warm, garnished with sesame seeds or additional green onions if desired.
