Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a pot, combine the coconut milk and red curry paste over medium heat, stirring until well mixed.
  3. Add the white fish fillet to the pot and cook for about 10 minutes, or until the fish is cooked through and flakes easily.

  5. Stir in the fish sauce, palm sugar, and lime juice, adjusting seasoning to taste.
  6. Simmer the mixture for an additional 5 minutes to allow the flavors to meld.
  7. To serve, place a portion of the cooked rice noodles in a bowl and ladle the fish curry sauce over the top.
  8. Garnish with fresh basil, bean sprouts, sliced cucumber, chopped cilantro, and chili flakes if desired.
