Ingredients

  • Rice flour - 50 grams
  • Coconut milk - 100 milliliters
  • Water - 50 milliliters
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Palm sugar - 20 grams
  • Grated coconut (fresh or desiccated) - 30 grams
  • Chopped scallions - 2 tablespoons
  • Sesame seeds - 1 tablespoon

Steps

  1. In a mixing bowl, combine rice flour, coconut milk, water, salt, and egg. Whisk until smooth and let it rest for 15 minutes.
  2. In a small saucepan, melt palm sugar with 1 tablespoon of water over low heat until dissolved, then set aside.
  3. Heat a non-stick skillet over medium heat and lightly grease it with oil. Pour a ladleful of the batter into the skillet, swirling to create a thin, even layer.
  4. Cook for 2-3 minutes or until the edges begin to lift and the bottom is lightly golden. Remove from the skillet and repeat with the remaining batter.
  5. Once all crepes are cooked, spread a teaspoon of melted palm sugar on each crepe, top with grated coconut, scallions, and a sprinkle of sesame seeds.
  6. Fold each crepe in half and serve warm.
