- Water - 50 milliliters
- Salt - 1/4 teaspoon
- Egg - 1 large
- Palm sugar - 20 grams
- Grated coconut (fresh or desiccated) - 30 grams
- Chopped scallions - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- In a mixing bowl, combine rice flour, coconut milk, water, salt, and egg. Whisk until smooth and let it rest for 15 minutes.
- In a small saucepan, melt palm sugar with 1 tablespoon of water over low heat until dissolved, then set aside.
- Heat a non-stick skillet over medium heat and lightly grease it with oil. Pour a ladleful of the batter into the skillet, swirling to create a thin, even layer.
- Cook for 2-3 minutes or until the edges begin to lift and the bottom is lightly golden. Remove from the skillet and repeat with the remaining batter.
- Once all crepes are cooked, spread a teaspoon of melted palm sugar on each crepe, top with grated coconut, scallions, and a sprinkle of sesame seeds.
- Fold each crepe in half and serve warm.
