  • Coconut milk - 50 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Gluten-free burger buns - 2
  • Lettuce leaves - 2
  • Cucumber - 1/2, thinly sliced
  • Sliced red chili - 1, for garnish

Steps

  1. In a mixing bowl, combine ground chicken, red curry paste, coconut milk, cilantro, lime juice, fish sauce, garlic, and ginger. Mix until well combined.

  3. Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until cooked through and golden brown.
  4. While the patties are cooking, prepare the gluten-free buns by toasting them lightly in the same skillet.
