- Jasmine rice - 100 grams
- Water - 800 milliliters
- Pork shoulder (kosher) - 150 grams, minced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (kosher) - 2 tablespoons
- White pepper - 1/2 teaspoon
- Salt - to taste
- Green onions - 2 stalks, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Sesame oil - 1 teaspoon
- Fried garlic - 1 tablespoon (for garnish)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, combine the rinsed rice and water. Bring to a boil over medium heat.
- Once boiling, reduce to a simmer and cook for about 20 minutes, stirring occasionally, until the rice has broken down and the mixture is creamy.
- In a separate pan, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Add the minced pork to the pan and cook until browned, breaking it up with a spatula.
- Stir in the soy sauce, white pepper, and salt. Cook for an additional 2-3 minutes until the pork is fully cooked.
- Once the rice porridge reaches the desired consistency, stir in the cooked pork mixture.
- Serve hot, garnished with chopped green onions, cilantro, and fried garlic.
