Ingredients

  • Jasmine rice - 100 grams
  • Water - 800 milliliters
  • Pork shoulder (kosher) - 150 grams, minced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (kosher) - 2 tablespoons
  • White pepper - 1/2 teaspoon
  • Salt - to taste
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame oil - 1 teaspoon
  • Fried garlic - 1 tablespoon (for garnish)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine the rinsed rice and water. Bring to a boil over medium heat.
  3. Once boiling, reduce to a simmer and cook for about 20 minutes, stirring occasionally, until the rice has broken down and the mixture is creamy.
  4. In a separate pan, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  5. Add the minced pork to the pan and cook until browned, breaking it up with a spatula.
  6. Stir in the soy sauce, white pepper, and salt. Cook for an additional 2-3 minutes until the pork is fully cooked.
  7. Once the rice porridge reaches the desired consistency, stir in the cooked pork mixture.
  8. Serve hot, garnished with chopped green onions, cilantro, and fried garlic.
