- Jasmine rice - 100 grams
- Water - 1 liter
- Vegetable broth - 500 ml
- Ginger - 10 grams, minced
- Garlic - 2 cloves, minced
- Carrot - 50 grams, diced
- Mushrooms - 100 grams, sliced
- Spring onions - 2 stalks, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Chili flakes - to taste
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice, water, and vegetable broth. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and add the minced ginger and garlic. Simmer for about 20 minutes, stirring occasionally.
- After 20 minutes, add the diced carrot and sliced mushrooms to the pot. Continue to simmer until the rice is soft and porridge-like, about another 5-10 minutes.
- Stir in the soy sauce and sesame oil. Season with salt and chili flakes to taste.
- Serve the Jok Mung Khao hot, garnished with chopped spring onions and cilantro, alongside lime wedges for squeezing.
