Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Vegetable broth - 500 ml
  • Ginger - 10 grams, minced
  • Garlic - 2 cloves, minced
  • Carrot - 50 grams, diced
  • Mushrooms - 100 grams, sliced
  • Spring onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Chili flakes - to taste
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice, water, and vegetable broth. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and add the minced ginger and garlic. Simmer for about 20 minutes, stirring occasionally.
  4. After 20 minutes, add the diced carrot and sliced mushrooms to the pot. Continue to simmer until the rice is soft and porridge-like, about another 5-10 minutes.
  5. Stir in the soy sauce and sesame oil. Season with salt and chili flakes to taste.
  6. Serve the Jok Mung Khao hot, garnished with chopped spring onions and cilantro, alongside lime wedges for squeezing.
