- Mung beans - 100 grams
- Water - 1 liter
- Coconut milk - 200 ml
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Ginger - 1 teaspoon, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Chili flakes - to taste
- Lime - 1, juiced
Steps
- Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
- In a pot, add the soaked mung beans and 1 liter of fresh water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the beans are soft.
- Drain the cooked mung beans and return them to the pot. Add the coconut milk, minced garlic, chopped shallots, grated ginger, salt, and black pepper to the pot.
- Stir the mixture well and cook on low heat for another 5-10 minutes, allowing the flavors to meld and the mixture to thicken slightly.
- Remove from heat and stir in the fresh cilantro, lime juice, and chili flakes to taste.
- Serve warm, garnished with additional cilantro and a sprinkle of chili flakes if desired.
