Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Chili oil - 1 teaspoon (optional)
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine the rinsed rice, water, and vegetable broth. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low and simmer, stirring occasionally, for about 20 minutes or until the rice is soft and the mixture has thickened to a porridge-like consistency.
  4. In a separate pan, heat a small amount of oil over medium heat. Sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  5. Add the sliced mushrooms to the pan and cook until softened, about 3-4 minutes. Then add the soy sauce and stir well.
  6. Once the rice is cooked, stir in the sautéed mushrooms and garlic mixture into the pot with the rice porridge. Mix well and simmer for an additional 2 minutes.
  7. Remove the pot from heat and portion the Jok into bowls. Top with chopped green onions, cilantro, and a drizzle of chili oil if desired.
  8. Serve hot with lime wedges and toasted sesame seeds on top.
