Ingredients
- Jasmine rice - 100 grams
- Water - 1 liter
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Mushrooms (shiitake or button) - 100 grams, sliced
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Chili oil - 1 teaspoon (optional)
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, combine the rinsed rice, water, and vegetable broth. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low and simmer, stirring occasionally, for about 20 minutes or until the rice is soft and the mixture has thickened to a porridge-like consistency.
- In a separate pan, heat a small amount of oil over medium heat. Sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced mushrooms to the pan and cook until softened, about 3-4 minutes. Then add the soy sauce and stir well.
- Once the rice is cooked, stir in the sautéed mushrooms and garlic mixture into the pot with the rice porridge. Mix well and simmer for an additional 2 minutes.
- Remove the pot from heat and portion the Jok into bowls. Top with chopped green onions, cilantro, and a drizzle of chili oil if desired.
- Serve hot with lime wedges and toasted sesame seeds on top.
