- Jasmine Rice - 200 grams
- Water - 400 ml
- Ripe Mango - 1 large, diced
- Coconut Milk - 100 ml
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Lime - 1, juiced
- Fresh Mint Leaves - a handful, for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and water is absorbed.
- While the rice is cooking, in a small saucepan, heat the coconut milk and sugar over low heat until the sugar dissolves. Remove from heat and let cool slightly.
- Once the rice is cooked, fluff it with a fork and drizzle the coconut milk mixture over the rice. Stir gently to combine.
- To serve, place a portion of the coconut jasmine rice on a plate, top with diced mango, and squeeze fresh lime juice over the top.
- Garnish with fresh mint leaves and enjoy your meal.
