Ingredients

  • Jasmine Rice - 200 grams
  • Water - 400 ml
  • Ripe Mango - 1 large, diced
  • Coconut Milk - 100 ml
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Lime - 1, juiced
  • Fresh Mint Leaves - a handful, for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and water is absorbed.
  4. While the rice is cooking, in a small saucepan, heat the coconut milk and sugar over low heat until the sugar dissolves. Remove from heat and let cool slightly.
  5. Once the rice is cooked, fluff it with a fork and drizzle the coconut milk mixture over the rice. Stir gently to combine.
  6. To serve, place a portion of the coconut jasmine rice on a plate, top with diced mango, and squeeze fresh lime juice over the top.
  7. Garnish with fresh mint leaves and enjoy your meal.
