- Jasmine rice - 150 grams
- Coconut milk - 200 milliliters
- Water - 200 milliliters
- Vegetable broth - 100 milliliters
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, julienned
- Snap peas - 100 grams
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced red bell pepper, julienned carrot, and snap peas to the saucepan. Cook for 3-4 minutes until the vegetables are tender-crisp.
- Stir in the rinsed Jasmine rice and cook for another 2 minutes, stirring frequently.
- Pour in the coconut milk, water, and vegetable broth. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then mix in the fresh basil and lime juice before serving.
