Ingredients

  • Zucchini - 2 medium (about 300g)
  • Soy sauce - 2 tablespoons (30ml)
  • Lime juice - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Brown sugar - 1 teaspoon (5g)
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash the zucchini and slice them lengthwise into about 1 cm thick slices.
  3. In a bowl, whisk together soy sauce, lime juice, sesame oil, brown sugar, minced garlic, and red chili flakes.
  4. Place the zucchini slices in a shallow dish and pour the marinade over them, making sure each piece is well coated. Let it marinate for at least 10 minutes.
  5. Once the grill is hot, arrange the zucchini slices on the grill. Cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
  6. Remove the grilled zucchini from the grill and let it rest for a minute.
  7. Serve the grilled zucchini garnished with fresh cilantro and sesame seeds.
