- Zucchini - 2 medium (about 300g)
- Soy sauce - 2 tablespoons (30ml)
- Lime juice - 1 tablespoon (15ml)
- Sesame oil - 1 tablespoon (15ml)
- Brown sugar - 1 teaspoon (5g)
- Garlic - 2 cloves, minced
- Red chili flakes - 1/2 teaspoon (optional)
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the grill to medium-high heat.
- Wash the zucchini and slice them lengthwise into about 1 cm thick slices.
- In a bowl, whisk together soy sauce, lime juice, sesame oil, brown sugar, minced garlic, and red chili flakes.
- Place the zucchini slices in a shallow dish and pour the marinade over them, making sure each piece is well coated. Let it marinate for at least 10 minutes.
- Once the grill is hot, arrange the zucchini slices on the grill. Cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
- Remove the grilled zucchini from the grill and let it rest for a minute.
- Serve the grilled zucchini garnished with fresh cilantro and sesame seeds.
