- Zucchini - 1 medium, sliced into thick rounds
- Bell pepper - 1 medium, cut into chunks
- Red onion - 1 medium, cut into wedges
- Mushrooms (shiitake or button) - 200 grams, whole
- Carrot - 1 large, sliced into thin strips
- Corn on the cob - 1, cut into halves
- Olive oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Peanut butter - 3 tablespoons
- Maple syrup - 1 tablespoon
- Soy sauce (for dipping) - 1 tablespoon
- Water - 2 tablespoons
- Chili flakes - 1/2 teaspoon (optional)
Steps
- In a large bowl, combine olive oil, soy sauce, lime juice, minced garlic, and chili flakes (if using). Mix well.
- Add the sliced zucchini, bell pepper, red onion, mushrooms, carrot, and corn to the bowl. Toss until the vegetables are well coated in the marinade. Let them marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Once hot, place the marinated vegetables on the grill. Grill for about 5-7 minutes per side, or until they are tender and have nice grill marks.
- While the vegetables are grilling, prepare the peanut dipping sauce by mixing peanut butter, maple syrup, soy sauce, and water in a small bowl until smooth.
