- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Mushrooms - 200 grams, halved
Steps
- In a food processor, combine Thai basil, cilantro, lemongrass, kaffir lime leaves, green chili, garlic, soy sauce, lime juice, and olive oil. Blend until a smooth paste forms.
- In a mixing bowl, add the sliced bell pepper, zucchini, and halved mushrooms.
- Pour the herb marinade over the vegetables and toss well to coat them evenly. Let them marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated vegetables onto skewers, alternating them for color and variety.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
