Ingredients

  • Lemongrass - 2 stalks
  • Kaffir lime leaves - 4 leaves
  • Green chili - 1 piece
  • Garlic - 2 cloves
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms - 200 grams, halved

Steps

  1. In a food processor, combine Thai basil, cilantro, lemongrass, kaffir lime leaves, green chili, garlic, soy sauce, lime juice, and olive oil. Blend until a smooth paste forms.
  2. In a mixing bowl, add the sliced bell pepper, zucchini, and halved mushrooms.
  3. Pour the herb marinade over the vegetables and toss well to coat them evenly. Let them marinate for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated vegetables onto skewers, alternating them for color and variety.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
