- Thai eggplant - 2 medium
- Vegetable oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Brown sugar - 1 teaspoon
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Chili flakes - 1 teaspoon
- Sesame seeds - 1 tablespoon, toasted
Steps
- Preheat your grill to medium heat.
- Wash the Thai eggplants and cut them in half lengthwise.
- In a bowl, mix the vegetable oil, soy sauce, lime juice, brown sugar, minced garlic, chili flakes, and half of the chopped cilantro to create a marinade.
- Brush the cut sides of the eggplants with the marinade and let them sit for about 10 minutes to absorb the flavors.
- Place the eggplants cut side down on the grill and cook for about 5-7 minutes until they have nice grill marks.
- Flip the eggplants over and continue to grill for another 5-7 minutes until they are tender.
- Remove the eggplants from the grill and sprinkle with toasted sesame seeds and the remaining cilantro before serving.
