Ingredients

  • Thai eggplant - 2 medium
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Chili flakes - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat your grill to medium heat.
  2. Wash the Thai eggplants and cut them in half lengthwise.
  3. In a bowl, mix the vegetable oil, soy sauce, lime juice, brown sugar, minced garlic, chili flakes, and half of the chopped cilantro to create a marinade.
  4. Brush the cut sides of the eggplants with the marinade and let them sit for about 10 minutes to absorb the flavors.
  5. Place the eggplants cut side down on the grill and cook for about 5-7 minutes until they have nice grill marks.
  6. Flip the eggplants over and continue to grill for another 5-7 minutes until they are tender.
  7. Remove the eggplants from the grill and sprinkle with toasted sesame seeds and the remaining cilantro before serving.
