Ingredients

  • Fresh pineapple - 1 medium (about 900g)
  • Red bell pepper - 1 (about 150g), diced
  • Cucumber - 1 medium (about 200g), diced
  • Red onion - 1 small (about 70g), thinly sliced
  • Fresh mint leaves - 15g, chopped
  • Fresh cilantro - 15g, chopped
  • Lime juice - 30ml
  • Soy sauce - 15ml
  • Agave syrup - 15ml
  • Sesame oil - 10ml
  • Chili flakes - 1g (optional, for heat)
  • Salt - to taste

Steps

  1. Preheat the grill to medium heat.
  2. Cut the pineapple into thick rings, about 1.5 cm in thickness.
  3. Grill the pineapple rings for about 3-4 minutes on each side until grill marks appear and they are caramelized.
  4. While the pineapple is grilling, prepare the salad dressing by mixing lime juice, soy sauce, agave syrup, sesame oil, chili flakes, and a pinch of salt in a small bowl.
  5. In a large mixing bowl, combine diced red bell pepper, cucumber, red onion, chopped mint, and cilantro.
  6. Once the pineapple is grilled, remove it from the grill and let it cool slightly before cutting it into bite-sized pieces.
  7. Add the grilled pineapple to the mixing bowl with the vegetables.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Serve immediately, garnished with extra mint and cilantro if desired.
