- Green curry paste - 2 tablespoons (30g)
- Coconut milk - 200ml
- Bell pepper (red or yellow) - 1 medium, sliced
- Snow peas - 100g
- Fresh basil leaves - 10g, chopped
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
- In a large pan, heat the coconut oil over medium heat until melted.
- Add the green curry paste to the pan and sauté for about 1 minute until fragrant.
- Pour in the coconut milk and stir until the curry paste is fully dissolved.
- Add the sliced bell pepper and snow peas to the pan, cooking for about 5 minutes until they are slightly tender.
- Stir in the zoodles and cook for an additional 3-4 minutes until they are just tender but still al dente.
- Season with lime juice, salt, and pepper to taste, and remove from heat.
- Garnish with chopped basil leaves before serving.
