Ingredients

  • Zucchini - 2 medium (about 400g)
  • Coconut oil - 1 tablespoon (15ml)
  • Green curry paste - 2 tablespoons (30g)
  • Coconut milk - 200ml
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Snow peas - 100g
  • Fresh basil leaves - 10g, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
  2. In a large pan, heat the coconut oil over medium heat until melted.
  3. Add the green curry paste to the pan and sauté for about 1 minute until fragrant.
  4. Pour in the coconut milk and stir until the curry paste is fully dissolved.
  5. Add the sliced bell pepper and snow peas to the pan, cooking for about 5 minutes until they are slightly tender.
  6. Stir in the zoodles and cook for an additional 3-4 minutes until they are just tender but still al dente.
  7. Season with lime juice, salt, and pepper to taste, and remove from heat.
  8. Garnish with chopped basil leaves before serving.
