Ingredients
- Firm tofu - 250 grams
- Coconut milk - 200 ml
- Green curry paste - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Bell pepper (sliced) - 1 medium
- Zucchini (sliced) - 1 medium
- Broccoli florets - 100 grams
- Fresh basil leaves - 10 grams
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Cooked jasmine rice - 150 grams
Steps
- Press the tofu for 15 minutes to remove excess water, then cut it into cubes.
- In a large pan, heat the vegetable oil over medium heat and add the tofu cubes. Cook until golden brown on all sides, about 8-10 minutes. Remove the tofu and set it aside.
- In the same pan, add the green curry paste and fry for 1-2 minutes until fragrant.
- Pour in the coconut milk, and stir to combine with the curry paste. Bring to a simmer.
- Add the sliced bell pepper, zucchini, and broccoli florets to the pan. Cook for 5-7 minutes until the vegetables are tender.
- Return the crispy tofu to the pan and add lime juice, soy sauce, and brown sugar. Stir well to combine and cook for another 2-3 minutes.
- Remove from heat and stir in the fresh basil leaves.
- Serve the green curry tofu over cooked jasmine rice.
