Ingredients

  • Firm tofu - 250 grams
  • Coconut milk - 200 ml
  • Green curry paste - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Bell pepper (sliced) - 1 medium
  • Zucchini (sliced) - 1 medium
  • Broccoli florets - 100 grams
  • Fresh basil leaves - 10 grams
  • Lime juice - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Cooked jasmine rice - 150 grams

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut it into cubes.
  2. In a large pan, heat the vegetable oil over medium heat and add the tofu cubes. Cook until golden brown on all sides, about 8-10 minutes. Remove the tofu and set it aside.
  3. In the same pan, add the green curry paste and fry for 1-2 minutes until fragrant.
  4. Pour in the coconut milk, and stir to combine with the curry paste. Bring to a simmer.
  5. Add the sliced bell pepper, zucchini, and broccoli florets to the pan. Cook for 5-7 minutes until the vegetables are tender.
  6. Return the crispy tofu to the pan and add lime juice, soy sauce, and brown sugar. Stir well to combine and cook for another 2-3 minutes.
  7. Remove from heat and stir in the fresh basil leaves.
  8. Serve the green curry tofu over cooked jasmine rice.
