Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 200 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Coconut flour - 30 grams
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Cooked chicken breast - 200 grams, shredded
  • Thai green curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Bell pepper - 1 medium, thinly sliced
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rice the cauliflower using a food processor until it resembles grains. Steam for about 5 minutes until tender, then let it cool slightly.
  3. In a large bowl, combine the riced cauliflower, 150 grams of mozzarella cheese, Parmesan cheese, egg, coconut flour, and salt. Mix until a dough forms.
  4. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a pizza crust about 1 cm thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  6. In a small saucepan, combine the shredded chicken, green curry paste, and coconut milk. Heat over medium heat until warmed through, about 5 minutes.
  7. Remove the crust from the oven and spread the chicken mixture evenly over the top.
  8. Top with sliced bell pepper, red onion, and the remaining mozzarella cheese.
  9. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and garnish with fresh cilantro before slicing and serving.
