- Cooked chicken breast - 200 grams, shredded
- Thai green curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Bell pepper - 1 medium, thinly sliced
- Red onion - 1 small, thinly sliced

Steps
- Preheat the oven to 220°C (425°F).
- Rice the cauliflower using a food processor until it resembles grains. Steam for about 5 minutes until tender, then let it cool slightly.
- In a large bowl, combine the riced cauliflower, 150 grams of mozzarella cheese, Parmesan cheese, egg, coconut flour, and salt. Mix until a dough forms.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
- In a small saucepan, combine the shredded chicken, green curry paste, and coconut milk. Heat over medium heat until warmed through, about 5 minutes.
- Remove the crust from the oven and spread the chicken mixture evenly over the top.
- Top with sliced bell pepper, red onion, and the remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh cilantro before slicing and serving.
