Ingredients

  • Chickpeas - 200 grams, drained
  • Thai green curry paste - 2 tablespoons
  • Cilantro - 30 grams, chopped
  • Green onion - 2 stalks, finely chopped
  • Breadcrumbs - 50 grams
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Sliced cucumber - 100 grams
  • Sliced avocado - 1 medium
  • Thai sweet chili sauce - for drizzling

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
  2. Add the Thai green curry paste, chopped cilantro, green onion, breadcrumbs, lime juice, salt, and black pepper to the mashed chickpeas, and mix well until combined.
  3. Form the mixture into two equal-sized patties.
