- Chickpeas - 200 grams, drained
- Thai green curry paste - 2 tablespoons
- Cilantro - 30 grams, chopped
- Green onion - 2 stalks, finely chopped
- Breadcrumbs - 50 grams
- Lime juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Sliced cucumber - 100 grams
- Sliced avocado - 1 medium
- Thai sweet chili sauce - for drizzling
Steps
- In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
- Add the Thai green curry paste, chopped cilantro, green onion, breadcrumbs, lime juice, salt, and black pepper to the mashed chickpeas, and mix well until combined.
- Form the mixture into two equal-sized patties.
