  • Red bell pepper (sliced) - 1/2 medium
  • Green beans (trimmed and cut into 2 cm pieces) - 100 grams
  • Nam Prik Pao (Thai chili jam) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar (preferably palm sugar) - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - a handful
  • Coriander leaves (for garnish) - a few sprigs

Steps

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and sliced shallots, stir-frying for about 1 minute until fragrant.
  3. Increase the heat to high, then add the shrimp, cooking for 2-3 minutes until they turn pink.
  4. Add the sliced red bell pepper and green beans, stir-frying for another 2 minutes.
  5. Stir in the Nam Prik Pao, fish sauce, and sugar, mixing well to combine all the ingredients.
  6. Cook for an additional 2 minutes, allowing the flavors to meld together.
  7. Remove from heat and drizzle with lime juice, stirring gently.
  8. Fold in the fresh basil leaves just before serving.
  9. Plate the dish and garnish with coriander leaves.
  10. Serve hot with steamed jasmine rice.
