Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Glass noodles - 100 grams
  • Garlic (minced) - 3 cloves
  • Shallots (sliced) - 2 medium
  • Spring onions (chopped) - 2 stalks
  • Carrot (julienned) - 1 small
  • Mushrooms (sliced) - 100 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Water - 200 ml

Steps

  1. Soak the glass noodles in warm water for about 15 minutes until softened, then drain and set aside.
  2. In a large skillet or wok, heat sesame oil over medium heat and sauté minced garlic and sliced shallots until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, approximately 3-4 minutes.
  4. Stir in the julienned carrot, sliced mushrooms, and chopped spring onions, cooking for an additional 3-4 minutes.
  5. Add the softened glass noodles to the skillet along with soy sauce, oyster sauce, lime juice, and black pepper. Mix well to combine all ingredients.
  6. Pour in the water and cover the skillet with a lid, allowing it to steam for about 5-7 minutes until the noodles absorb the flavors.
  7. Remove from heat, garnish with chopped cilantro, and serve hot.
