- Glass noodles - 100 grams
- Garlic (minced) - 3 cloves
- Shallots (sliced) - 2 medium
- Spring onions (chopped) - 2 stalks
- Carrot (julienned) - 1 small
- Mushrooms (sliced) - 100 grams
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Sesame oil - 1 tablespoon
- Water - 200 ml
Steps
- Soak the glass noodles in warm water for about 15 minutes until softened, then drain and set aside.
- In a large skillet or wok, heat sesame oil over medium heat and sauté minced garlic and sliced shallots until fragrant.
- Add the shrimp to the skillet and cook until they turn pink, approximately 3-4 minutes.
- Stir in the julienned carrot, sliced mushrooms, and chopped spring onions, cooking for an additional 3-4 minutes.
- Add the softened glass noodles to the skillet along with soy sauce, oyster sauce, lime juice, and black pepper. Mix well to combine all ingredients.
- Pour in the water and cover the skillet with a lid, allowing it to steam for about 5-7 minutes until the noodles absorb the flavors.
- Remove from heat, garnish with chopped cilantro, and serve hot.
