Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Glass noodles - 100 grams
  • Garlic (minced) - 3 cloves
  • Shallots (sliced) - 2 medium
  • Spring onions (chopped) - 2 stalks
  • Fresh cilantro (chopped) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Chicken broth - 150 ml
  • Lime juice - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Pepper - to taste
  • Salt - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the glass noodles in warm water for about 15 minutes until soft, then drain and set aside.
  3. In a large mixing bowl, combine the shrimp, garlic, shallots, spring onions, cilantro, soy sauce, oyster sauce, sesame oil, lime juice, chili flakes, salt, and pepper. Mix well.
  4. Add the soaked glass noodles to the shrimp mixture and toss to combine all ingredients thoroughly.
  5. Transfer the mixture into a baking dish and pour the chicken broth over the top.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
  7. Remove the foil and bake for an additional 5-10 minutes, or until the shrimp are cooked through and the noodles are slightly crispy on top.
  8. Remove from the oven and let it rest for a few minutes before serving.
