- Shrimp (peeled and deveined) - 200 grams
- Glass noodles - 100 grams
- Garlic (minced) - 3 cloves
- Shallots (sliced) - 2 medium
- Spring onions (chopped) - 2 stalks
- Fresh cilantro (chopped) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Chicken broth - 150 ml
- Lime juice - 1 tablespoon
- Chili flakes - 1 teaspoon
- Pepper - to taste
- Salt - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Soak the glass noodles in warm water for about 15 minutes until soft, then drain and set aside.
- In a large mixing bowl, combine the shrimp, garlic, shallots, spring onions, cilantro, soy sauce, oyster sauce, sesame oil, lime juice, chili flakes, salt, and pepper. Mix well.
- Add the soaked glass noodles to the shrimp mixture and toss to combine all ingredients thoroughly.
- Transfer the mixture into a baking dish and pour the chicken broth over the top.
- Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the shrimp are cooked through and the noodles are slightly crispy on top.
- Remove from the oven and let it rest for a few minutes before serving.
